Stir-Fry Gourmets

Ingredients:
Half pound gourmet mushrooms (Oyster, Lion’s Mane, Chestnut, etc.) sliced or cut into bites size pieces
1 tbsp Sesame Oil (or neutral oil of choice)
3 tsp Minced garlic
1-inch piece of Ginger – Grated
1 small onion – Sliced
1 bell pepper – Sliced
2 tbsp Soy Sauce or Tamari
1 tbsp Rice Vinegar or Lime Juice
Sesame seeds and chopped green onion (for garnish)
Cooked rice or noodles, to serve
Instructions:
Prep your ingredients: slice or tear mushrooms into bite-sized pieces and prep all veggies for your dish
Heat your pan: In a large skillet or wok over medium-high heat
Cook mushrooms: Toss in mushrooms and cook until golden brown and moisture cooks off (4-6 minutes).
Add butter or oil
Aromatics: Add garlic, ginger, and onion. Stir for 1–2 minutes until fragrant.
Toss in veggies: Add bell pepper and stir-fry until slightly tender but still crisp.
Season: Stir in soy sauce, vinegar, and a touch of maple syrup or honey if using. Cook another 1–2 minutes.
Serve: Remove from heat, garnish with sesame seeds and green onions. Serve over rice or noodles.
