What Are Golden Enoki Mushrooms?
Golden Enoki (Flammulina velutipes) are a variation of the common white enoki, but unlike their pale counterparts, they’re grown with exposure to light and fresh air — which gives them their signature golden color and stronger, richer flavor.
Golden Enokis grow in tight clusters of long, thin stems topped with tiny golden caps. They’re tender but slightly more robust than white enoki, with a mildly nutty, earthy flavor and a slight crunch when cooked.
